
Easy Mayo
I can’t believe that I waited so many years before trying to make mayo from scratch.
With only four ingredients that you probably already have around the house and five minutes, you can make homemade mayo. Mayo, or mayonnaise, is simply an emulsion of oil and eggs, with a little acidity and salt added to brighten the flavours. Here’s the basic recipe:
Ingredients:
- 1 cup: neutral-flavored oil (like light olive oil, grapeseed oil, walnut or sweet almond oil)
- 2 each : large eggs at room tempurature
- 2 tsp: fresh squeezed lemon juice (or vinegar)
- 1 pinch: good quality fine grain sea salt
Instructions:
Separate the egg whites from the yolks. Set aside the egg whites for another purpose and place the egg yolks in the bowl.
